The one click gui solution you are looking for probably doesn't exist because it would ultimately be much more complicated given the number of different solution for filesystems/encryption in linux and existing functionality wherein this is done at install time is easy enough as it is and serves 99.999% of use cases. Here are two links to alternative full disk encryption methods: Disk Encryption HOWTO dated. You are looking at 1 -> a few hours depending on how slow/fast your storage is and you could spend most of this enjoying 1 or more cups of coffee while files copy over. You have literally used more time considering your options than it would require to do this. It would actually be easier to back up the contents of /home + any config files you have manually modified in /etc, then reinstall the OS, install any software you have installed, and then copy the files back over. The closest thing would be to copy all the data over to a different drive and use a live disk to manually set up the encrypted container, copy the data back and set it up to boot from this. There is in place solution where you can click a button in a gui and have an encrypted system.
